
Quick Chinese Pineapple Fried Rice

Ingredients:
- 2 cups Cooked Jasmine Rice
- 1 cup Pineapple
- 2 tablespoons Soysauce
- 2 Scallions
- 2 Garlic cloves
- 1 cup Cooked shrimp or chicken (Optional)
- 2 Eggs
- 2 tablespoons Vegetable oil
Instructions:
- Heat a wok or large non-stick pan over medium-high heat.
- Add 1 tablespoon of oil and swirl it around to coat the pan. Add the eggs and scramble until just set, remove from the pan and set aside.
- In the same pan, add the remaining oil, then add scallions and garlic. Stir-fry for 30 seconds until fragrant.
- Add the rice directly to the pan. Stir-fry for a few minutes, using a spatula to break up any clumps.
- Add the pineapple and cooked shrimp or chicken if using. Stir-fry for a couple more minutes, until the pineapple is heated through.
- Add the soy sauce, mixing well.
- Add back the scrambled eggs, breaking them up into small pieces as you mix.
- Serve the pineapple fried rice hot, garnished with additional scallions if desired.
