Quick Chinese Pineapple Fried Rice

Ingredients:

  • 2 cups Cooked Jasmine Rice
  • 1 cup Pineapple
  • 2 tablespoons Soysauce
  • 2 Scallions
  • 2 Garlic cloves
  • 1 cup Cooked shrimp or chicken (Optional)
  • 2 Eggs
  • 2 tablespoons Vegetable oil

Instructions:

  1. Heat a wok or large non-stick pan over medium-high heat.
  2. Add 1 tablespoon of oil and swirl it around to coat the pan. Add the eggs and scramble until just set, remove from the pan and set aside.
  3. In the same pan, add the remaining oil, then add scallions and garlic. Stir-fry for 30 seconds until fragrant.
  4. Add the rice directly to the pan. Stir-fry for a few minutes, using a spatula to break up any clumps.
  5. Add the pineapple and cooked shrimp or chicken if using. Stir-fry for a couple more minutes, until the pineapple is heated through.
  6. Add the soy sauce, mixing well.
  7. Add back the scrambled eggs, breaking them up into small pieces as you mix.
  8. Serve the pineapple fried rice hot, garnished with additional scallions if desired.
