Quick Chinese Egg Fried Rice

Ingredients:

  • 4 cups Cooked rice
  • 4 Eggs
  • 1 teaspoon Sesame oil
  • 3 tablespoons Soy sauce
  • 3 stalks Scallions
  • 2 cloves Garlic
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Break the eggs into a bowl and whisk.
  2. Heat the sesame oil in a large skillet or wok over medium heat.
  3. Add the garlic and fry until fragrant.
  4. Increase the heat to high and add the cooked rice. Stir-fry the rice for 2-3 minutes.
  5. Push the rice to the side of the skillet/wok and pour the whisked eggs into the other side. Scramble the eggs, breaking them into small bits.
  6. Once the eggs are cooked, mix them with the rice.
  7. Add soy sauce, chopped scallions, salt, and pepper. Stir well to combine.
  8. Serve the egg fried rice hot, garnished with some more chopped green onions.
