Quick Chicken Quesadilla

Ingredients:

  • 2 pcs Chicken breasts
  • 8 pcs Tortilla wraps
  • 1.5 cups Shredded cheddar cheese
  • 2 tablespoons Olive oil
  • to taste Salt and pepper
  • for serving Salsa
  • for serving Sour cream

Instructions:

  1. Season the chicken with salt and pepper. Heat 1 tablespoon olive oil on a pan over medium heat. Cook chicken until no longer pink, about 7 minutes each side. Let it cool, then shred it using two forks.
  2. Lay the tortilla wraps on a flat surface. Sprinkle about 3 tablespoons of cheddar on one half of each tortilla, then spread the shredded chicken on top of the cheese. Fold the tortillas into halves.
  3. Heat the remaining tablespoon of oil on a pan over medium heat. Cook the quesadillas until golden brown on each side, about 3 minutes each side.
  4. Cut each quesadilla into 4 pieces. Serve with salsa and sour cream on the side.
