
Quick Chicken Quesadilla

Ingredients:
- 2 pcs Chicken breasts
- 8 pcs Tortilla wraps
- 1.5 cups Shredded cheddar cheese
- 2 tablespoons Olive oil
- to taste Salt and pepper
- for serving Salsa
- for serving Sour cream
Instructions:
- Season the chicken with salt and pepper. Heat 1 tablespoon olive oil on a pan over medium heat. Cook chicken until no longer pink, about 7 minutes each side. Let it cool, then shred it using two forks.
- Lay the tortilla wraps on a flat surface. Sprinkle about 3 tablespoons of cheddar on one half of each tortilla, then spread the shredded chicken on top of the cheese. Fold the tortillas into halves.
- Heat the remaining tablespoon of oil on a pan over medium heat. Cook the quesadillas until golden brown on each side, about 3 minutes each side.
- Cut each quesadilla into 4 pieces. Serve with salsa and sour cream on the side.
