Quick Chicken and Egg Breakfast Burritos

Ingredients:

  • 2 pieces Chicken breasts
  • 4 pieces Eggs
  • 4 pieces Tortillas
  • 1 cup Cheddar cheese
  • to taste Salsa
  • 2 tablespoons Olive oil
  • to taste Salt and black pepper

Instructions:

  1. Heat the olive oil in a pan over medium heat.
  2. Cook the chicken breasts in the oil until they're no longer pink in the center, approximately 5-7 minutes per side.
  3. While the chicken is cooking, crack the eggs into a bowl and beat them until the yolks and whites are fully mixed.
  4. When the chicken is cooked, remove it from the pan and set it aside to cool. Once cooled, dice it into bite-sized pieces.
  5. In the same pan, add the beaten eggs and scramble them on low heat. Season with salt and black pepper.
  6. Warm the tortillas in a toaster or oven until they're soft and flexible.
  7. Assemble the burritos by dividing the chicken, scrambled eggs, and cheddar cheese evenly among the tortillas. Top each with salsa to your liking.
  8. Roll up the tortillas, tucking in the ends to prevent the fillings from falling out.
  9. Serve immediately.
