Quick and Easy Veggie Quesadillas

Ingredients:

  • 8 pieces Tortillas
  • 2 cups Mixed vegetables (bell peppers, onions, tomatoes)
  • 2 cups Shredded cheese
  • 2 tbsp Olive oil
  • To taste Salt and pepper

Instructions:

  1. Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  2. Add the mixed vegetables to the skillet and season with salt and pepper. Cook for 5-7 minutes, until vegetables are softened.
  3. Place a tortilla in the skillet, add 1/4 of the cooked vegetables and sprinkle with 1/4 of the shredded cheese. Top with another tortilla.
  4. Cook for 2-3 minutes on each side, until cheese is melted and tortilla is crispy.
  5. Repeat with the remaining tortillas, vegetables, and cheese.
  6. Cut the quesadillas into quarters and serve hot.
