
Quick and Easy Veggie Quesadillas

Ingredients:
- 8 pieces Tortillas
- 2 cups Mixed vegetables (bell peppers, onions, tomatoes)
- 2 cups Shredded cheese
- 2 tbsp Olive oil
- To taste Salt and pepper
Instructions:
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- Add the mixed vegetables to the skillet and season with salt and pepper. Cook for 5-7 minutes, until vegetables are softened.
- Place a tortilla in the skillet, add 1/4 of the cooked vegetables and sprinkle with 1/4 of the shredded cheese. Top with another tortilla.
- Cook for 2-3 minutes on each side, until cheese is melted and tortilla is crispy.
- Repeat with the remaining tortillas, vegetables, and cheese.
- Cut the quesadillas into quarters and serve hot.
