
Quick and Easy Vegetable Fried Rice

Ingredients:
- 2 cups rice
- 2 tablespoons vegetable oil
- 3 cloves garlic
- 1 cup frozen mixed vegetables
- 2 stalks green onions
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- 2 pieces egg
Instructions:
- Cook the rice according to the instructions on the package.
- While the rice is cooking, heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the garlic to the pan and cook for about 30 seconds, until fragrant.
- Add the frozen vegetables to the pan and stir to combine. Cook until the vegetables are heated through, about 5 minutes.
- Slice the green onions and add them to the pan.
- Push the vegetables to one side of the pan and crack the eggs into the other side. Scramble the eggs in the pan until they are fully cooked.
- When the rice is done cooking, add it to the pan along with the soy sauce and sesame oil. Stir to combine everything together, making sure the rice is fully coated in the sauce.
- Serve the fried rice hot, garnished with extra green onions if desired.
