
Quick and Easy Vegetable Biryani

Ingredients:
- 2 cups Basmati Rice
- 2 cups Mixed Vegetables
- 2 medium sized Onions
- 2 medium sized Tomatoes
- 2 Green chillies
- 1 tbsp Ginger-garlic paste
- 2 tbsp Biryani Masala
- 0.5 tsp Turmeric Powder
- to taste Salt
- 3 tbsp Oil
- 4 cups Water
- small bunch Fresh coriander leaves
Instructions:
- Rinse the basmati rice under cold water until the water runs clear. Soak in water for 15 minutes, then drain.
- Heat oil in a large pan or wok over medium heat. Add the chopped onions and green chillies, sauté until the onions are soft and translucent.
- Add the ginger-garlic paste to the pan and sauté for a minute until the raw smell goes away.
- Add the biryani masala, turmeric powder, and salt. Mix well.
- Add in the chopped tomatoes and cook until they are soft and mushy.
- Add the mixed vegetables to the pan and sauté for a couple of minutes.
- Drain the soaked rice and add it to the pan. Stir gently to mix the rice with the vegetables and spices.
- Add water and bring the mixture to a boil. Once it's boiling, reduce the heat to low, cover the pan, and let it simmer for about 20 minutes, or until the rice is cooked and all the water is absorbed.
- Turn off the heat and let the biryani sit for 5 minutes without disturbing it. Then, fluff up the rice gently with a fork.
- Garnish with fresh coriander leaves before serving. Enjoy your quick and easy Vegetable Biryani!
