
Quick and Easy Shrimp Tacos

Ingredients:
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 packet taco seasoning
- 8 pieces corn tortillas
- 1 whole avocado, sliced
- 1 small red onion, finely chopped
- 1 whole jalapeno, sliced
- 1 whole lime, cut into wedges
- 1 handful cilantro, chopped
- to taste salsa
Instructions:
- In a large bowl, toss the shrimp with the olive oil and taco seasoning.
- Heat a large skillet over medium-high heat. Add the shrimp and cook until they are pink and cooked through, about 5 minutes.
- Heat the corn tortillas in a dry skillet until they are warm and pliable.
- To assemble the tacos, place a few shrimp on each tortilla. Top with avocado slices, chopped red onion, jalapeno slices, and a squeeze of lime juice. Sprinkle with chopped cilantro and add salsa to taste.
- Repeat with the remaining shrimp and tortillas. Serve the tacos immediately, with extra lime wedges on the side for squeezing.
