Quick and Easy Shrimp Tacos

Ingredients:

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 packet taco seasoning
  • 8 pieces corn tortillas
  • 1 whole avocado, sliced
  • 1 small red onion, finely chopped
  • 1 whole jalapeno, sliced
  • 1 whole lime, cut into wedges
  • 1 handful cilantro, chopped
  • to taste salsa

Instructions:

  1. In a large bowl, toss the shrimp with the olive oil and taco seasoning.
  2. Heat a large skillet over medium-high heat. Add the shrimp and cook until they are pink and cooked through, about 5 minutes.
  3. Heat the corn tortillas in a dry skillet until they are warm and pliable.
  4. To assemble the tacos, place a few shrimp on each tortilla. Top with avocado slices, chopped red onion, jalapeno slices, and a squeeze of lime juice. Sprinkle with chopped cilantro and add salsa to taste.
  5. Repeat with the remaining shrimp and tortillas. Serve the tacos immediately, with extra lime wedges on the side for squeezing.
