Quick and Easy Seafood Chowder

Ingredients:

  • 2 tablespoons Butter
  • 1 medium-sized Onion
  • 2 cloves Garlic cloves
  • 400 grams Mixed seafood
  • 1 tablespoon Cornflour
  • 2 cups Milk
  • 1 cup Chicken broth
  • 2 medium-sized Potatoes
  • to taste Salt and pepper

Instructions:

  1. Melt butter in a large pot over medium heat. Add chopped onion and garlic cloves, cook until onion is translucent.
  2. Add potatoes and broth, bring to a boil and simmer until potatoes are just tender.
  3. In a separate bowl, mix cornflour with a bit of cold water until smooth. Slowly add to the pot, stirring constantly.
  4. Add mixed seafood and milk to the pot. Stir well and cook for another 5 minutes, until seafood is cooked through and soup is slightly thickened.
  5. Season with salt and pepper to taste. Serve hot.
