Quick and Easy Pork Curry

Ingredients:

  • 500 grams Pork
  • 2 tablespoons Curry powder
  • 1 tablespoon Ginger
  • 2 Garlic cloves
  • 1 Onion
  • 1 can Coconut milk
  • 2 tablespoons Oil
  • 1 sprig Coriander leaves
  • to taste Salt
  • to taste Freshly ground pepper

Instructions:

  1. Slice the pork into thin strips and set aside.
  2. In a large pan, heat the oil over medium heat. Add the onion, garlic, and ginger, cooking until softened.
  3. Add the curry powder to the pan and stir well.
  4. Add the pork to the pan, stirring until it is fully coated in the curry mixture.
  5. Add the coconut milk, salt, and pepper to the pan and allow to simmer for 15 minutes, or until the pork is fully cooked.
  6. Finally, top with coriander leaves just before serving. Serve hot with steamed rice.
