
Quick and Easy Pork Curry

Ingredients:
- 500 grams Pork
- 2 tablespoons Curry powder
- 1 tablespoon Ginger
- 2 Garlic cloves
- 1 Onion
- 1 can Coconut milk
- 2 tablespoons Oil
- 1 sprig Coriander leaves
- to taste Salt
- to taste Freshly ground pepper
Instructions:
- Slice the pork into thin strips and set aside.
- In a large pan, heat the oil over medium heat. Add the onion, garlic, and ginger, cooking until softened.
- Add the curry powder to the pan and stir well.
- Add the pork to the pan, stirring until it is fully coated in the curry mixture.
- Add the coconut milk, salt, and pepper to the pan and allow to simmer for 15 minutes, or until the pork is fully cooked.
- Finally, top with coriander leaves just before serving. Serve hot with steamed rice.
