Quick and Easy Pasta Pomodoro

Ingredients:

  • 500 grams Spaghetti pasta
  • 4 whole Ripe tomatoes
  • 3 cloves Garlic
  • 3 tablespoons Olive oil
  • 1 bunch Fresh basil leaves
  • to taste Salt and pepper
  • 50 grams Parmesan cheese

Instructions:

  1. Boil water in a large pot. Once boiling, add salt and pasta. Cook until al dente and drain, reserving a cup of pasta water.
  2. While the pasta is cooking, cut the tomatoes into cubes, chop the garlic, and thinly slice the basil leaves.
  3. Heat olive oil in a large pan over medium heat. Add garlic and sauté until fragrant.
  4. Add the chopped tomatoes to the pan, seasoning with salt and pepper. Cook for about 10 minutes, until the tomatoes are soft.
  5. Combine the cooked pasta with the tomato sauce, adding reserved pasta water as needed to thin out the sauce.
  6. Stir in the fresh basil and grated parmesan cheese.
  7. Serve immediately, with additional parmesan cheese on top if desired.
