Quick and Easy Midnight Vegetable Stir-Fry

Ingredients:

  • 2 tbsp Vegetable oil
  • 2 cloves Garlic
  • 1 cup Broccoli
  • 1 cup Carrots
  • 1 Red bell pepper
  • 1 cup Snow peas
  • 2 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 1 tbsp Cornstarch
  • 1 tbsp Water
  • 2 cups Rice

Instructions:

  1. Prepare all vegetables and set aside.
  2. Heat 1 tbsp of vegetable oil over medium-high heat in a wok or large skillet. Add garlic and stir for about 30 seconds until fragrant.
  3. Add broccoli, carrots, and bell pepper to the pan, stir frying for 2-3 minutes until they begin to soften.
  4. Add in snow peas, continuing to stir fry until all vegetables are tender-crisp.
  5. In a small bowl, whisk together soy sauce, sesame oil, cornstarch and water. Pour over vegetables and stir to coat. Continue cooking for another 2-3 minutes until sauce has thickened.
  6. Serve hot over freshly cooked rice.
