
Quick and Easy Midnight Vegetable Stir-Fry

Ingredients:
- 2 tbsp Vegetable oil
- 2 cloves Garlic
- 1 cup Broccoli
- 1 cup Carrots
- 1 Red bell pepper
- 1 cup Snow peas
- 2 tbsp Soy sauce
- 1 tsp Sesame oil
- 1 tbsp Cornstarch
- 1 tbsp Water
- 2 cups Rice
Instructions:
- Prepare all vegetables and set aside.
- Heat 1 tbsp of vegetable oil over medium-high heat in a wok or large skillet. Add garlic and stir for about 30 seconds until fragrant.
- Add broccoli, carrots, and bell pepper to the pan, stir frying for 2-3 minutes until they begin to soften.
- Add in snow peas, continuing to stir fry until all vegetables are tender-crisp.
- In a small bowl, whisk together soy sauce, sesame oil, cornstarch and water. Pour over vegetables and stir to coat. Continue cooking for another 2-3 minutes until sauce has thickened.
- Serve hot over freshly cooked rice.
