Quick and Easy Mexican Beef Tacos

Ingredients:

  • 1 pound Ground beef
  • 1 packet Taco seasoning mix
  • 1 can Refried beans
  • 12 pieces Taco shells
  • 1 cup Cheddar cheese
  • 1 whole Avocado
  • 2 whole Tomatoes
  • 1 whole Onion
  • 1 bundle Cilantro
  • 1 whole Lime

Instructions:

  1. In a large skillet, brown the ground beef over medium heat until fully cooked and no longer pink. Drain the excess fat.
  2. Add the taco seasoning mix to the beef according to the packet instructions.
  3. In a small pot, heat the refried beans over low heat until warm.
  4. Preheat your oven to the temperature suggested on the taco shell package and then warm the shells in the oven according to the package instructions.
  5. Dice the tomatoes, onions and avocado, and chop the cilantro. Mix them together in a bowl and squeeze the juice from the lime onto the mixture to make a fresh salsa.
  6. Assemble your tacos by spreading a spoonful of beans on each shell, topping with a hearty serving of the seasoned beef, a sprinkle of cheddar cheese, and a dollop of the fresh salsa.
