Quick and Easy Mediterranean Vegetable Stir-Fry

Ingredients:

  • 2 tablespoons Olive oil
  • 3 cloves Garlic
  • 1 Yellow bell pepper
  • 1 Red bell pepper
  • 2 Zucchini
  • 1 cup Cherry tomatoes
  • 2 cups Spinach leaves
  • 1/2 cup Feta cheese
  • 1 teaspoon Dried oregano
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the minced garlic and sauté until fragrant.
  3. Chop the bell peppers and zucchini into bite-sized pieces and add them to the pan. Cook for about 5 minutes, or until they start to soften.
  4. Add the cherry tomatoes, spinach leaves, dried oregano, salt, and pepper. Continue to cook until all the vegetables are tender.
  5. Crumble the feta cheese over the top of the vegetables, then remove from heat.
