
Quick and Easy Mediterranean Vegetable Stir-Fry

Ingredients:
- 2 tablespoons Olive oil
- 3 cloves Garlic
- 1 Yellow bell pepper
- 1 Red bell pepper
- 2 Zucchini
- 1 cup Cherry tomatoes
- 2 cups Spinach leaves
- 1/2 cup Feta cheese
- 1 teaspoon Dried oregano
- to taste Salt
- to taste Black pepper
Instructions:
- Heat the olive oil in a large pan over medium heat.
- Add the minced garlic and sauté until fragrant.
- Chop the bell peppers and zucchini into bite-sized pieces and add them to the pan. Cook for about 5 minutes, or until they start to soften.
- Add the cherry tomatoes, spinach leaves, dried oregano, salt, and pepper. Continue to cook until all the vegetables are tender.
- Crumble the feta cheese over the top of the vegetables, then remove from heat.
