Quick and Easy Mediterranean Chicken

Ingredients:

  • 2 pieces Chicken Breasts
  • 2 cloves Garlic Cloves
  • 2 tablespoons Olive Oil
  • 1 tablespoon Fresh Lemon Juice
  • 1 teaspoon Dried Oregano
  • 1/4 cup Pitted Kalamata Olives
  • 2 tablespoons Chopped Fresh Parsley
  • 1/4 cup Feta Cheese
  • to taste Salt and Pepper

Instructions:

  1. Heat the olive oil in a skillet over medium-high heat.
  2. Season the chicken breasts with salt, pepper and dried oregano.
  3. Place the chicken breasts in the skillet and cook for about 7-8 minutes on each side, until they're golden brown and cooked through.
  4. While the chicken is cooking, mince the garlic and juice the lemon.
  5. Once the chicken is cooked, remove from the skillet and set aside.
  6. In the same skillet, add the garlic and cook for about 1 minute until fragrant.
  7. Add the lemon juice and kalamata olives to the skillet.
  8. Return the chicken to the skillet and let it simmer in the sauce for about 2-3 minutes.
  9. Transfer the chicken to a plate and top with the sauce from the skillet, feta cheese, and fresh parsley. Serve immediately.
