
Quick and Easy Mediterranean Chicken

Ingredients:
- 2 pieces Chicken Breasts
- 2 cloves Garlic Cloves
- 2 tablespoons Olive Oil
- 1 tablespoon Fresh Lemon Juice
- 1 teaspoon Dried Oregano
- 1/4 cup Pitted Kalamata Olives
- 2 tablespoons Chopped Fresh Parsley
- 1/4 cup Feta Cheese
- to taste Salt and Pepper
Instructions:
- Heat the olive oil in a skillet over medium-high heat.
- Season the chicken breasts with salt, pepper and dried oregano.
- Place the chicken breasts in the skillet and cook for about 7-8 minutes on each side, until they're golden brown and cooked through.
- While the chicken is cooking, mince the garlic and juice the lemon.
- Once the chicken is cooked, remove from the skillet and set aside.
- In the same skillet, add the garlic and cook for about 1 minute until fragrant.
- Add the lemon juice and kalamata olives to the skillet.
- Return the chicken to the skillet and let it simmer in the sauce for about 2-3 minutes.
- Transfer the chicken to a plate and top with the sauce from the skillet, feta cheese, and fresh parsley. Serve immediately.
