Quick and Easy Mediterranean Beef Skillet

Ingredients:

  • 0.5 pound beef tenderloin
  • 2 tablespoons olive oil
  • 1 garlic clove
  • 1 red bell pepper
  • 1 medium onion
  • 1 cup cherry tomatoes
  • 0.25 cup feta cheese
  • 0.25 cup black olives
  • 1 handful fresh basil leaves
  • to taste salt
  • to taste black pepper

Instructions:

  1. Slice the beef tenderloin into thin strips. Season with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the beef and stir-fry until it becomes brown. Remove the beef from the skillet and set aside.
  3. In the same skillet, add the chopped garlic, chopped onion, and sliced red bell pepper. Sauté until they become soft.
  4. Return the beef to the skillet. Add the cherry tomatoes, black olives and feta cheese. Stir well.
  5. Cover the skillet and let cook for about 5 minutes until everything is well blended and the cheese starts to melt.
  6. Remove from the heat. Garnish with fresh basil leaves before serving. Enjoy your quick and easy Mediterranean Beef Skillet!
