
Quick and Easy Mediterranean Beef Skillet

Ingredients:
- 0.5 pound beef tenderloin
- 2 tablespoons olive oil
- 1 garlic clove
- 1 red bell pepper
- 1 medium onion
- 1 cup cherry tomatoes
- 0.25 cup feta cheese
- 0.25 cup black olives
- 1 handful fresh basil leaves
- to taste salt
- to taste black pepper
Instructions:
- Slice the beef tenderloin into thin strips. Season with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the beef and stir-fry until it becomes brown. Remove the beef from the skillet and set aside.
- In the same skillet, add the chopped garlic, chopped onion, and sliced red bell pepper. Sauté until they become soft.
- Return the beef to the skillet. Add the cherry tomatoes, black olives and feta cheese. Stir well.
- Cover the skillet and let cook for about 5 minutes until everything is well blended and the cheese starts to melt.
