Quick and Easy Italian Risotto

Ingredients:

  • 1.5 cups Arborio rice
  • 2 tablespoons Olive oil
  • 1 small size, finely chopped White onion
  • 2 cloves, minced Garlic cloves
  • 1 cup White wine
  • 4 cups Chicken broth
  • 1 cup, grated Parmesan cheese
  • 3 tablespoons Butter
  • Pinch (to taste) Salt and pepper
  • Freshly chopped (for garnish) Parsley

Instructions:

  1. In a large saucepan, heat the olive oil over medium heat.
  2. Add the finely chopped onion and minced garlic, sauté until they are translucent, about 2-3 minutes.
  3. Stir in the Arborio rice, make sure all the grains are coated with the oil.
  4. Pour in the white wine, stir continuously until the rice has absorbed the liquid.
  5. Add the chicken broth, one cup at a time, stirring constantly and waiting until the broth is absorbed before adding more.
  6. Turn off the heat, and stir in the butter and grated Parmesan cheese. Season with salt and black pepper to taste.
  7. Garnish with freshly chopped parsley before serving.
