
Quick and Easy Italian Risotto

Ingredients:
- 1.5 cups Arborio rice
- 2 tablespoons Olive oil
- 1 small size, finely chopped White onion
- 2 cloves, minced Garlic cloves
- 1 cup White wine
- 4 cups Chicken broth
- 1 cup, grated Parmesan cheese
- 3 tablespoons Butter
- Pinch (to taste) Salt and pepper
- Freshly chopped (for garnish) Parsley
Instructions:
- In a large saucepan, heat the olive oil over medium heat.
- Add the finely chopped onion and minced garlic, sauté until they are translucent, about 2-3 minutes.
- Stir in the Arborio rice, make sure all the grains are coated with the oil.
- Pour in the white wine, stir continuously until the rice has absorbed the liquid.
- Add the chicken broth, one cup at a time, stirring constantly and waiting until the broth is absorbed before adding more.
- Turn off the heat, and stir in the butter and grated Parmesan cheese. Season with salt and black pepper to taste.
- Garnish with freshly chopped parsley before serving.
