
Quick and Easy Indian Veg Pulao

Ingredients:
- 2 cups Basmati Rice
- 1.5 cups Mixed Vegetables (carrots, beans, peas)
- 2 medium sized Onions
- 4 cloves Garlic
- 2 tablespoons Ghee or cooking oil
- 1 teaspoon Cumin seeds
- 1 teaspoon Garam Masala
- 0.5 teaspoon Turmeric powder
- to taste Salt
- 4 cups Water
Instructions:
- Wash the rice thoroughly and soak it in water for 15 minutes.
- Heat oil in a pan, add cumin seeds and wait for them to crackle.
- Add finely chopped onions and minced garlic to the pan. Saute until the onions become translucent.
- Add the mixed vegetables to the pan and saute for another 2 minutes.
- Drain the rice and add it to the pan. Stir gently to mix the rice with the vegetables.
- Add turmeric, garam masala, and salt. Mix well, ensuring all the rice grains are coated well with the spices.
- Add water and bring the mix to a boil. Reduce the heat to low, cover the pan, and let it simmer until the rice is cooked and all the water is absorbed. This usually takes around 15-20 minutes.
- Once cooked, fluff the rice gently with a fork. Serve hot with raita or plain yogurt.
