Quick and Easy Indian Veg Pulao

Ingredients:

  • 2 cups Basmati Rice
  • 1.5 cups Mixed Vegetables (carrots, beans, peas)
  • 2 medium sized Onions
  • 4 cloves Garlic
  • 2 tablespoons Ghee or cooking oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Garam Masala
  • 0.5 teaspoon Turmeric powder
  • to taste Salt
  • 4 cups Water

Instructions:

  1. Wash the rice thoroughly and soak it in water for 15 minutes.
  2. Heat oil in a pan, add cumin seeds and wait for them to crackle.
  3. Add finely chopped onions and minced garlic to the pan. Saute until the onions become translucent.
  4. Add the mixed vegetables to the pan and saute for another 2 minutes.
  5. Drain the rice and add it to the pan. Stir gently to mix the rice with the vegetables.
  6. Add turmeric, garam masala, and salt. Mix well, ensuring all the rice grains are coated well with the spices.
  7. Add water and bring the mix to a boil. Reduce the heat to low, cover the pan, and let it simmer until the rice is cooked and all the water is absorbed. This usually takes around 15-20 minutes.
  8. Once cooked, fluff the rice gently with a fork. Serve hot with raita or plain yogurt.
