Quick and Easy Indian Style Rice

Ingredients:

  • 2 cups Rice, preferably Basmati
  • 4 cups Water
  • 2 tablespoons Vegetable oil
  • 1 small Red onion, thinly sliced
  • 1/2 teaspoon Turmeric
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Mustard seeds
  • As per taste Salt

Instructions:

  1. Rinse the rice under cold water until the water runs clear. Drain.
  2. In a large pan, heat the oil over medium heat.
  3. Add the mustard seeds, cumin seeds, and sliced onion to the pan and sauté for 2-3 minutes, until the seeds pop and onion starts to soften.
  4. Stir in the turmeric, and continue to cook for another 1-2 minutes.
  5. Add the rice to the pan and stir to coat the grains in the oil and spices.
  6. Add the water and salt, and bring to a boil.
  7. Reduce the heat to low, cover the pan, and simmer for 15-20 minutes, until the rice is cooked and all the water has been absorbed.
  8. Fluff the cooked rice with a fork, and serve immediately.
