
Quick and Easy Indian Prawn Curry

Ingredients:
- 2 tbsp olive oil
- 1 unit onion, finely chopped
- 2 unit garlic cloves, minced
- 2 tsp grated ginger
- 1 tsp ground cumin
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 tsp ground paprika
- 1/2 tsp cayenne pepper
- 500 g large raw prawns, peeled and deveined
- 1 unit can of coconut milk
- Handful unit fresh coriander for garnish
- Salt to taste
Instructions:
- Heat the oil in a large pan over medium-high heat. Add the onions and cook until they become translucent.
- Add the garlic and ginger to the pan and cook for another minute.
- Stir in the cumin, turmeric, coriander, paprika, and cayenne pepper. Cook for another minute, stirring continuously.
- Add the prawns to the pan, cook for 2-3 minutes until they start to turn pink.
- Pour in the coconut milk and bring the mixture to a boil. Reduce the heat and let it simmer for about 10 minutes until the sauce thickens.
- Season with salt according to your taste.
- Garnish with fresh coriander leaves before serving.
- Serve hot with naan bread or basmati rice.
