Quick and Easy Indian Prawn Curry

Ingredients:

  • 2 tbsp olive oil
  • 1 unit onion, finely chopped
  • 2 unit garlic cloves, minced
  • 2 tsp grated ginger
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp ground paprika
  • 1/2 tsp cayenne pepper
  • 500 g large raw prawns, peeled and deveined
  • 1 unit can of coconut milk
  • Handful unit fresh coriander for garnish
  • Salt to taste

Instructions:

  1. Heat the oil in a large pan over medium-high heat. Add the onions and cook until they become translucent.
  2. Add the garlic and ginger to the pan and cook for another minute.
  3. Stir in the cumin, turmeric, coriander, paprika, and cayenne pepper. Cook for another minute, stirring continuously.
  4. Add the prawns to the pan, cook for 2-3 minutes until they start to turn pink.
  5. Pour in the coconut milk and bring the mixture to a boil. Reduce the heat and let it simmer for about 10 minutes until the sauce thickens.
  6. Season with salt according to your taste.
  7. Garnish with fresh coriander leaves before serving.
  8. Serve hot with naan bread or basmati rice.
