
Quick and Easy Indian Mango Curry

Ingredients:
- 2 ripe mangoes
- 2 small onions
- 2 medium tomatoes
- 2 green chillies
- 2 cloves of garlic
- 1 inch piece ginger
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon coriander powder
- to taste salt
- 2 tablespoons vegetable oil
- 1/2 teaspoon mustard seeds
- few curry leaves
- 1/2 cup water
Instructions:
- Peel and cut the mangoes into chunks. Set aside.
- Blend together onions, tomatoes, green chillies, garlic, and ginger into a smooth paste.
- Heat oil in a pan. Add mustard seeds and curry leaves. When they start to splutter, add the paste to the pan.
- Add turmeric powder, red chilli powder, coriander powder, and salt. Mix well.
- Cover and cook for ten minutes on medium heat, or until oil separates from the mixture.
- Add mango chunks and water. Mix well.
- Cover and cook on low heat for another ten minutes, or until mangoes are soft and well-cooked.
- Serve hot with rice or roti.
