Quick and Easy Indian Mango Curry

Ingredients:

  • 2 ripe mangoes
  • 2 small onions
  • 2 medium tomatoes
  • 2 green chillies
  • 2 cloves of garlic
  • 1 inch piece ginger
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon coriander powder
  • to taste salt
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon mustard seeds
  • few curry leaves
  • 1/2 cup water

Instructions:

  1. Peel and cut the mangoes into chunks. Set aside.
  2. Blend together onions, tomatoes, green chillies, garlic, and ginger into a smooth paste.
  3. Heat oil in a pan. Add mustard seeds and curry leaves. When they start to splutter, add the paste to the pan.
  4. Add turmeric powder, red chilli powder, coriander powder, and salt. Mix well.
  5. Cover and cook for ten minutes on medium heat, or until oil separates from the mixture.
  6. Add mango chunks and water. Mix well.
  7. Cover and cook on low heat for another ten minutes, or until mangoes are soft and well-cooked.
  8. Serve hot with rice or roti.
