Quick and Easy Indian Chicken Curry

Ingredients:

  • 2 pieces Chicken breast
  • 2 tbsp Vegetable oil
  • 1 cup Chopped onion
  • 2 cloves Garlic cloves, minced
  • 1 tbsp Ginger, grated
  • 1 tsp Garam masala
  • 1 tsp Turmeric
  • 2 tbsp Tomato paste
  • 1 cup Chicken broth
  • 1 cup Coconut milk
  • to taste Fresh cilantro for garnish

Instructions:

  1. 1. Cut the chicken into bite-sized pieces and set aside.
  2. 2. Heat the oil in a large skillet over medium-high heat. Add the onion and cook until it's softened and beginning to brown, about 5 minutes.
  3. 3. Stir in the garlic, ginger, garam masala, turmeric, and tomato paste. Cook for 2 minutes more, until fragrant.
  4. 4. Add the chicken to the skillet and brown on all sides. This should take about 5 minutes.
  5. 5. Stir in the chicken broth and coconut milk. Bring the mixture to a simmer, then reduce the heat to low and cook until the chicken is fully cooked and the sauce has thickened. This should take about 10 minutes.
  6. 6. Serve the curry over rice or with naan bread, garnished with fresh cilantro. Enjoy your quick and easy Indian chicken curry!
