
Quick and Easy Indian Chicken Curry

Ingredients:
- 2 pieces Chicken breast
- 2 tbsp Vegetable oil
- 1 cup Chopped onion
- 2 cloves Garlic cloves, minced
- 1 tbsp Ginger, grated
- 1 tsp Garam masala
- 1 tsp Turmeric
- 2 tbsp Tomato paste
- 1 cup Chicken broth
- 1 cup Coconut milk
- to taste Fresh cilantro for garnish
Instructions:
- 1. Cut the chicken into bite-sized pieces and set aside.
- 2. Heat the oil in a large skillet over medium-high heat. Add the onion and cook until it's softened and beginning to brown, about 5 minutes.
- 3. Stir in the garlic, ginger, garam masala, turmeric, and tomato paste. Cook for 2 minutes more, until fragrant.
- 4. Add the chicken to the skillet and brown on all sides. This should take about 5 minutes.
- 5. Stir in the chicken broth and coconut milk. Bring the mixture to a simmer, then reduce the heat to low and cook until the chicken is fully cooked and the sauce has thickened. This should take about 10 minutes.
