
Quick and Easy French Fruit Pancakes

Ingredients:
- 1 cup flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 1 tablespoon butter, melted
- 2 cups mixed fresh fruits (such as blueberries, strawberries, peaches), sliced
- as needed powdered sugar, for dusting
Instructions:
- In a large bowl, combine the flour, sugar, baking powder, and salt. Stir to mix evenly.
- In another bowl, beat together the milk, egg, and melted butter.
- Gradually add the wet ingredients to the dry ingredients, stirring just until combined. The batter will be a bit lumpy, but that's okay.
- Heat a non-stick pan over medium heat. Ladle a small amount of batter onto the pan and top with a mixture of fresh fruits.
- Cook until bubbles appear on the surface of the pancake, then flip and cook until golden brown on the other side.
- Remove from the pan and keep warm. Repeat with the rest of the batter and fruit.
- Serve the pancakes warm, sprinkled with powdered sugar.
