Quick and Easy French Fruit Pancakes

Ingredients:

  • 1 cup flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 1 tablespoon butter, melted
  • 2 cups mixed fresh fruits (such as blueberries, strawberries, peaches), sliced
  • as needed powdered sugar, for dusting

Instructions:

  1. In a large bowl, combine the flour, sugar, baking powder, and salt. Stir to mix evenly.
  2. In another bowl, beat together the milk, egg, and melted butter.
  3. Gradually add the wet ingredients to the dry ingredients, stirring just until combined. The batter will be a bit lumpy, but that's okay.
  4. Heat a non-stick pan over medium heat. Ladle a small amount of batter onto the pan and top with a mixture of fresh fruits.
  5. Cook until bubbles appear on the surface of the pancake, then flip and cook until golden brown on the other side.
  6. Remove from the pan and keep warm. Repeat with the rest of the batter and fruit.
  7. Serve the pancakes warm, sprinkled with powdered sugar.
