Quick and Easy Chinese Fried Rice

Ingredients:

  • 3 cups Cooked rice
  • 2 large Eggs
  • 2 tablespoons Vegetable oil
  • 1 cup Frozen peas and carrots
  • 2 tablespoons Soy sauce
  • 2 for garnish Green onions
  • to taste Salt and pepper

Instructions:

  1. 1. Beat the eggs and set aside.
  2. 2. Heat 1 tablespoon of oil in a large skillet or wok over medium high heat.
  3. 3. Add the frozen peas and carrots, cooking until they are warm.
  4. 4. Move the veggies to the side and pour beaten eggs onto the other side. Use spatula to scramble eggs. Once cooked, mix eggs with the vegetables.
  5. 5. Add the rice to the veggie and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until heated through and combined.
  6. 6. Add desired amount of salt and pepper. Pour the second tablespoon of oil around the outside of the rice, stirring until everything is thoroughly mixed and hot.
  7. 7. Garnish with green onions, serve, and enjoy!
