
Quick and Easy Chinese Fried Rice

Ingredients:
- 3 cups Cooked rice
- 2 large Eggs
- 2 tablespoons Vegetable oil
- 1 cup Frozen peas and carrots
- 2 tablespoons Soy sauce
- 2 for garnish Green onions
- to taste Salt and pepper
Instructions:
- 1. Beat the eggs and set aside.
- 2. Heat 1 tablespoon of oil in a large skillet or wok over medium high heat.
- 3. Add the frozen peas and carrots, cooking until they are warm.
- 4. Move the veggies to the side and pour beaten eggs onto the other side. Use spatula to scramble eggs. Once cooked, mix eggs with the vegetables.
- 5. Add the rice to the veggie and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until heated through and combined.
- 6. Add desired amount of salt and pepper. Pour the second tablespoon of oil around the outside of the rice, stirring until everything is thoroughly mixed and hot.
- 7. Garnish with green onions, serve, and enjoy!
