Quick and Easy Beef Bourguignon

Ingredients:

  • 500 grams Beef Chuck Roast
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 cup Red Wine
  • 1 cup Beef Broth
  • 2 medium sized Carrots
  • 1 cup Button Mushrooms
  • 1 cup Pearl Onions
  • 1 teaspoon Thyme
  • To taste Salt
  • To taste Pepper

Instructions:

  1. Cut the beef into 2 inch chunks and season with salt and pepper.
  2. Heat the oil in a pan over medium heat and brown the beef.
  3. Add the crushed garlic to the pan and cook until fragrant.
  4. Pour in the wine and broth, scraping the bottom of the pan to lift any beefy bits. Let simmer for a few minutes to reduce.
  5. Add in the chopped carrots, mushrooms, and pearl onions. Sprinkle in the thyme and let it all simmer for 15 minutes until the veggies are tender.
  6. Adjust seasoning with additional salt and pepper, if needed.
  7. Serve your Quick and Easy Beef Bourguignon hot.
