Quick and Easy American Rice Snack Bowl

Ingredients:

  • 1 cup Long Grain White Rice
  • 2 cups Water
  • 1 tablespoon Olive Oil
  • 1 cup Chopped Red Bell Pepper
  • 0.5 cup Chopped Onion
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper
  • 0.5 cup Shredded Cheddar Cheese

Instructions:

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, bring water to a boil. Stir in the rice, reduce heat, cover, and simmer for 15 minutes or until all water is absorbed.
  3. While the rice is cooking, heat olive oil in a medium skillet over medium heat. Add the chopped bell pepper and onion to the skillet and cook until softened, about 5 minutes. Season with salt and pepper.
  4. When the rice is done, fluff it lightly with a fork. Stir in the cooked bell peppers and onions.
  5. Divide the rice and vegetable mix into two bowls and top each with shredded cheddar cheese. Serve immediately.
