
Provençal Baked Fish

Ingredients:
- 4 pieces white fish fillets
- 2 tbsp olive oil
- 2 garlic cloves
- 1 onion
- 14.5 oz can diced tomatoes
- 2 tbsp capers
- 4 fresh thyme sprigs
- 2 tbsp fresh parsley
- 0.5 tsp salt
- 0.25 tsp black pepper
Instructions:
- Preheat the oven to 425°F (220°C).
- Heat the olive oil in a large ovenproof skillet over medium heat. Add the garlic and onion, stirring until the onion is translucent, about 5 minutes.
- Stir in the tomatoes, capers, thyme, 1 tablespoon of the parsley, salt, and pepper. Bring to a simmer.
- Nestle the fish fillets in the tomato mixture. Drizzle with a little more olive oil, if desired.
- Transfer the skillet to the preheated oven and bake until the fish is opaque throughout, 15-20 minutes. Sprinkle with the remaining parsley before serving.
