Provençal Baked Fish

Ingredients:

  • 4 pieces white fish fillets
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 1 onion
  • 14.5 oz can diced tomatoes
  • 2 tbsp capers
  • 4 fresh thyme sprigs
  • 2 tbsp fresh parsley
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Heat the olive oil in a large ovenproof skillet over medium heat. Add the garlic and onion, stirring until the onion is translucent, about 5 minutes.
  3. Stir in the tomatoes, capers, thyme, 1 tablespoon of the parsley, salt, and pepper. Bring to a simmer.
  4. Nestle the fish fillets in the tomato mixture. Drizzle with a little more olive oil, if desired.
  5. Transfer the skillet to the preheated oven and bake until the fish is opaque throughout, 15-20 minutes. Sprinkle with the remaining parsley before serving.
