Pork Shogayaki: Japanese Ginger Pork

Ingredients:

  • 400 grams Pork loin
  • 2 tablespoons, grated Fresh ginger root
  • 4 tablespoons Soy sauce
  • 2 tablespoons Mirin
  • 1 tablespoon Sugar
  • 1 tablespoon Vegetable oil
  • 2 stalks Spring onions
  • To taste Shichimi togarashi (Japanese seven spice)

Instructions:

  1. Slice the pork loin into thin, bite-sized pieces.
  2. In a bowl, mix together the grated ginger, soy sauce, mirin and sugar.
  3. Marinate the pork slices in the mixture for at least 10 minutes, or ideally 1-2 hours.
  4. Heat the vegetable oil in a large pan or wok over medium heat.
  5. Add the marinated pork slices to the pan and fry until cooked through.
  6. Pour in the remaining marinade and cook over high heat until it becomes a glaze.
  7. Serve hot, garnished with sliced spring onions and a sprinkle of shichimi togarashi. Perfect as a main course with steamed rice or a side salad.
