
Pork Shogayaki: Japanese Ginger Pork

Ingredients:
- 400 grams Pork loin
- 2 tablespoons, grated Fresh ginger root
- 4 tablespoons Soy sauce
- 2 tablespoons Mirin
- 1 tablespoon Sugar
- 1 tablespoon Vegetable oil
- 2 stalks Spring onions
- To taste Shichimi togarashi (Japanese seven spice)
Instructions:
- Slice the pork loin into thin, bite-sized pieces.
- In a bowl, mix together the grated ginger, soy sauce, mirin and sugar.
- Marinate the pork slices in the mixture for at least 10 minutes, or ideally 1-2 hours.
- Heat the vegetable oil in a large pan or wok over medium heat.
- Add the marinated pork slices to the pan and fry until cooked through.
- Pour in the remaining marinade and cook over high heat until it becomes a glaze.
- Serve hot, garnished with sliced spring onions and a sprinkle of shichimi togarashi. Perfect as a main course with steamed rice or a side salad.
