Pork Rillettes

Total Time: 2 hours 30 minutes plus cooling time
Ingredients:
- 1.5 pound Pork shoulder
- 0.5 cup Duck fat
- 2 cloves Garlic
- 0.5 cup White wine
- 2 cups Water
- 2 Bay leaves
- 2 sprigs Thyme
- to taste Salt
- to taste Black pepper
Instructions:
- Cut the pork shoulder into 1 inch cubes.
- In a large pot, melt the duck fat over medium heat.
- Add the cubed pork, minced garlic, white wine, water, salt, black pepper, bay leaves, and thyme to the pot.
- Cover and simmer for 2 hours, or until the pork is very tender.
- Remove the bay leaves and thyme sprigs from the pot. Shred the pork with two forks and stir it into the fat in the pot.
- Transfer the mixture to a food processor and pulse until it's coarse but spreadable.
- Pack the rillettes into a container and refrigerate overnight.
- Spread on crackers or bread to serve.
