Pork Rillettes

Total Time: 2 hours 30 minutes plus cooling time

Ingredients:

  • 1.5 pound Pork shoulder
  • 0.5 cup Duck fat
  • 2 cloves Garlic
  • 0.5 cup White wine
  • 2 cups Water
  • 2 Bay leaves
  • 2 sprigs Thyme
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Cut the pork shoulder into 1 inch cubes.
  2. In a large pot, melt the duck fat over medium heat.
  3. Add the cubed pork, minced garlic, white wine, water, salt, black pepper, bay leaves, and thyme to the pot.
  4. Cover and simmer for 2 hours, or until the pork is very tender.
  5. Remove the bay leaves and thyme sprigs from the pot. Shred the pork with two forks and stir it into the fat in the pot.
  6. Transfer the mixture to a food processor and pulse until it's coarse but spreadable.
  7. Pack the rillettes into a container and refrigerate overnight.
  8. Spread on crackers or bread to serve.
