
Pork Carnitas Breakfast Bowl

Ingredients:
- 1 pound Pork loin
- 1 tablespoon Olive oil
- 1 teaspoon Cumin
- 1 teaspoon Coriander
- 2 cloves Garlic
- 1 whole Red bell pepper
- 2 cups Romaine lettuce
- 1 whole Avocado
- 4 whole Eggs
- 1 tablespoon Lemon juice
- to taste Salt and pepper
Instructions:
- Preheat the oven to 350 degrees F. Cut the pork into chunks and toss with the olive oil, cumin, coriander, and minced garlic. Season with salt and pepper, then spread out on a baking sheet.
- Roast the pork for 20-25 minutes, or until cooked through and slightly crispy.
- While the pork is cooking, chop the bell pepper and lettuce. Slice the avocado and toss with the lemon juice to prevent browning.
- Cook the eggs to desired doneness (scrambled, over-easy, etc.).
- To assemble the bowls, start with a base of lettuce. Top with the roasted pork, bell pepper, and avocado. Add the cooked egg on top, then season with additional salt and pepper if desired.
