Pork Bourguignon

Ingredients:
- 2 lbs Pork shoulder
- 2 cups Red wine
- 1 large Onion
- 2 large Carrot
- 2 Garlic cloves
- 1 tbs Thyme
- 2 Bay leaves
- 3 cups Beef broth
- 2 tbs Butter
- 2 tbs Flour
- to taste Salt and pepper
Instructions:
- Cut the pork shoulder into large pieces and season with salt and pepper.
- In a large dutch oven or pot, melt butter over medium heat. Add the pork and cook until browned on all sides.
- Remove the pork from the pot and set aside. In the same pot, add the chopped onion, carrots, and garlic. Cook until they start to soften.
- Sprinkle the flour over the vegetables and stir. Cook for another minute.
- Slowly pour in the red wine, scraping the bottom of the pot to loosen any bits stuck to the bottom.
- Return the pork to the pot. Add the thyme, bay leaves, and beef broth. Bring the mixture to a simmer. Cover the pot and reduce the heat to low.
- Simmer for around 3 hours, stirring occasionally, until the pork is tender.
- Adjust the seasoning with more salt and pepper if needed. Serve warm.
