Pork Bourguignon

Ingredients:

  • 2 lbs Pork shoulder
  • 2 cups Red wine
  • 1 large Onion
  • 2 large Carrot
  • 2 Garlic cloves
  • 1 tbs Thyme
  • 2 Bay leaves
  • 3 cups Beef broth
  • 2 tbs Butter
  • 2 tbs Flour
  • to taste Salt and pepper

Instructions:

  1. Cut the pork shoulder into large pieces and season with salt and pepper.
  2. In a large dutch oven or pot, melt butter over medium heat. Add the pork and cook until browned on all sides.
  3. Remove the pork from the pot and set aside. In the same pot, add the chopped onion, carrots, and garlic. Cook until they start to soften.
  4. Sprinkle the flour over the vegetables and stir. Cook for another minute.
  5. Slowly pour in the red wine, scraping the bottom of the pot to loosen any bits stuck to the bottom.
  6. Return the pork to the pot. Add the thyme, bay leaves, and beef broth. Bring the mixture to a simmer. Cover the pot and reduce the heat to low.
  7. Simmer for around 3 hours, stirring occasionally, until the pork is tender.
  8. Adjust the seasoning with more salt and pepper if needed. Serve warm.
