Petit Déjeuner Pork Hash

Ingredients:

  • 400 grams pork sausage
  • 2 medium-sized russet potatoes
  • 1 large onion
  • 1 red bell pepper
  • 2 garlic cloves
  • 3 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • few sprigs fresh parsley

Instructions:

  1. Heat 2 tablespoons of olive oil in a large non-stick pan over medium heat.
  2. Add the pork sausage and cook until browned, breaking up the meat with a spatula.
  3. While the pork is cooking, peel and dice the potatoes, onion, and bell pepper. Mince the garlic.
  4. Once the pork is browned, remove it from the pan and set aside.
  5. Add the remaining olive oil to the pan, then add the potatoes. Cook until golden brown and crisp.
  6. Add the onion, bell pepper, and garlic to the pan and season with salt and pepper. Cook until the vegetables are soft.
  7. Return the pork to the pan and mix well. Cook for a few more minutes until everything is heated through.
  8. Garnish with fresh parsley before serving.
