
Petit Déjeuner Pork Hash

Ingredients:
- 400 grams pork sausage
- 2 medium-sized russet potatoes
- 1 large onion
- 1 red bell pepper
- 2 garlic cloves
- 3 tablespoons olive oil
- to taste salt
- to taste pepper
- few sprigs fresh parsley
Instructions:
- Heat 2 tablespoons of olive oil in a large non-stick pan over medium heat.
- Add the pork sausage and cook until browned, breaking up the meat with a spatula.
- While the pork is cooking, peel and dice the potatoes, onion, and bell pepper. Mince the garlic.
- Once the pork is browned, remove it from the pan and set aside.
- Add the remaining olive oil to the pan, then add the potatoes. Cook until golden brown and crisp.
- Add the onion, bell pepper, and garlic to the pan and season with salt and pepper. Cook until the vegetables are soft.
- Return the pork to the pan and mix well. Cook for a few more minutes until everything is heated through.
- Garnish with fresh parsley before serving.
