
Petit Dejeuner Omelette

Ingredients:
- 4 whole Eggs
- 2 tablespoons Low-fat milk
- 1/2 chopped Red bell pepper
- 1/4 chopped Onion
- 1/2 cup fresh Spinach
- 1/4 cup sliced Cherry tomatoes
- 1/4 cup Shredded low-fat cheese
- to taste Salt
- to taste Pepper
- 1 tablespoon Olive oil
Instructions:
- 1. Beat the eggs and milk together in a bowl until blended; set aside.
- 2. Heat the olive oil in a non-stick frying pan over medium heat, add onion and red bell pepper, sauté until they are softened.
- 3. Add the spinach and tomatoes to the pan, cook until spinach is wilted and tomatoes are slightly softened.
- 4. Pour the egg mixture into the pan, sprinkle with salt and pepper. Cover the pan and cook until the eggs are set, about 5-7 minutes.
- 5. Sprinkle the cheese onto one-half of the omelette, fold the omelette over the cheese, cut in half and serve hot.
