Petit Dejeuner Omelette

Ingredients:

  • 4 whole Eggs
  • 2 tablespoons Low-fat milk
  • 1/2 chopped Red bell pepper
  • 1/4 chopped Onion
  • 1/2 cup fresh Spinach
  • 1/4 cup sliced Cherry tomatoes
  • 1/4 cup Shredded low-fat cheese
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon Olive oil

Instructions:

  1. 1. Beat the eggs and milk together in a bowl until blended; set aside.
  2. 2. Heat the olive oil in a non-stick frying pan over medium heat, add onion and red bell pepper, sauté until they are softened.
  3. 3. Add the spinach and tomatoes to the pan, cook until spinach is wilted and tomatoes are slightly softened.
  4. 4. Pour the egg mixture into the pan, sprinkle with salt and pepper. Cover the pan and cook until the eggs are set, about 5-7 minutes.
  5. 5. Sprinkle the cheese onto one-half of the omelette, fold the omelette over the cheese, cut in half and serve hot.
