
Penne alla Vodka

Ingredients:
- 500 grams Penne Pasta
- 1/2 cup Vodka
- 500 grams Tomato Puree
- 1/2 cup Heavy Cream
- 3 cloves Garlic
- 1 teaspoon Red Pepper Flakes
- 2 tablespoons Olive Oil
- to taste Salt and Pepper
- 1/2 cup Grated Parmesan Cheese
- to garnish Fresh Basil Leaves
Instructions:
- Bring a large pot of salted water to a boil. Add penne and cook until al dente. Drain, reserving 1 cup of pasta water.
- In a large frying pan, heat olive oil over medium heat. Add minced garlic and red pepper flakes, cook for 1 minute until fragrant.
- Stir in vodka and tomato puree, reduce heat to low and simmer for about 10 minutes.
- Stir in heavy cream, season with salt and pepper. If the sauce is too thick, add some pasta water to thin it out.
- Add cooked pasta into the sauce, stir well to make sure all pasta is coated in sauce.
- Sprinkle over grated Parmesan cheese and stir until melted.
- Serve hot, garnished with fresh basil leaves.
