Penne alla Vodka

Ingredients:

  • 500 grams Penne Pasta
  • 1/2 cup Vodka
  • 500 grams Tomato Puree
  • 1/2 cup Heavy Cream
  • 3 cloves Garlic
  • 1 teaspoon Red Pepper Flakes
  • 2 tablespoons Olive Oil
  • to taste Salt and Pepper
  • 1/2 cup Grated Parmesan Cheese
  • to garnish Fresh Basil Leaves

Instructions:

  1. Bring a large pot of salted water to a boil. Add penne and cook until al dente. Drain, reserving 1 cup of pasta water.
  2. In a large frying pan, heat olive oil over medium heat. Add minced garlic and red pepper flakes, cook for 1 minute until fragrant.
  3. Stir in vodka and tomato puree, reduce heat to low and simmer for about 10 minutes.
  4. Stir in heavy cream, season with salt and pepper. If the sauce is too thick, add some pasta water to thin it out.
  5. Add cooked pasta into the sauce, stir well to make sure all pasta is coated in sauce.
  6. Sprinkle over grated Parmesan cheese and stir until melted.
  7. Serve hot, garnished with fresh basil leaves.
