
Pav Bhaji - Exotic Indian Vegetable Medley

Ingredients:
- 2 medium Potato
- 3 medium Tomatoes
- 1 large Onion
- 1 medium Capsicum
- 2 tablespoon Pav Bhaji Masala
- 1 whole Lemon
- 50 grams Butter
- 1/2 cup Coriander leaves
- 8 pieces Pav bread
- to taste Salt
Instructions:
- Boil the potatoes and mash them.
- Chop the onions, tomatoes, and capsicum.
- Heat half of the butter in a pan, add onions and fry until golden brown.
- Add the tomatoes, capsicum, Pav Bhaji Masala and salt to the pan and stir well.
- Add the mashed potatoes and mix thoroughly.
- Simmer the mix for 10-15 minutes while stirring occasionally. If it gets too dry, add some water.
- Remove from heat and squeeze the lemon over the bhaji. Mix well.
- Add chopped coriander leaves and keep the bhaji aside.
- Heat the remaining butter in another pan and toast the Pav bread on both sides.
- Serve the hot Pav bread with the bhaji. Enjoy this Indian delicacy!
