Pav Bhaji - Exotic Indian Vegetable Medley

Ingredients:

  • 2 medium Potato
  • 3 medium Tomatoes
  • 1 large Onion
  • 1 medium Capsicum
  • 2 tablespoon Pav Bhaji Masala
  • 1 whole Lemon
  • 50 grams Butter
  • 1/2 cup Coriander leaves
  • 8 pieces Pav bread
  • to taste Salt

Instructions:

  1. Boil the potatoes and mash them.
  2. Chop the onions, tomatoes, and capsicum.
  3. Heat half of the butter in a pan, add onions and fry until golden brown.
  4. Add the tomatoes, capsicum, Pav Bhaji Masala and salt to the pan and stir well.
  5. Add the mashed potatoes and mix thoroughly.
  6. Simmer the mix for 10-15 minutes while stirring occasionally. If it gets too dry, add some water.
  7. Remove from heat and squeeze the lemon over the bhaji. Mix well.
  8. Add chopped coriander leaves and keep the bhaji aside.
  9. Heat the remaining butter in another pan and toast the Pav bread on both sides.
  10. Serve the hot Pav bread with the bhaji. Enjoy this Indian delicacy!
