Ingredients:

  • 200 grams spaghetti
  • 2 whole eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 2 stalks green onions
  • to taste strip nori (seaweed)
  • to garnish teaspoon sesame seeds
  • as needed cooking oil

Instructions:

  1. Boil the spaghetti in a large pot of salted boiling water until al dente according to package instructions, then drain and set aside.
  2. Heat oil in a pan over medium heat. Beat the eggs then add to the pan, scrambling them until they're just set.
  3. Add the cooked spaghetti to the pan with scrambled eggs. Drizzle with soy sauce and mirin, stirring well to evenly coat the pasta.
  4. Divide the pasta between two plates. Top with sliced green onions, a strip of nori, and a sprinkling of sesame seeds before serving.
