
Pasta Provençale

Ingredients:
- 2 tbsp Olive oil
- 3 pcs Garlic cloves
- 1 pc Onion
- 1 pc Red bell pepper
- 1 can Diced tomatoes
- 0.5 cup Black olives
- 2 tbsp Capers
- 0.5 tsp Dried oregano
- to taste Salt
- to taste Pepper
- 400 grams Spaghetti pasta
- as needed Grated Parmesan cheese
- as garnish Fresh basil leaves
Instructions:
- Heat the olive oil in a large pan over medium heat. Add the garlic and onions and sauté until lightly golden.
- Add the red bell pepper to the pan and stir well. Cover and let cook for about 5 minutes, until softened.
- Add the diced tomatoes, black olives, capers, oregano, salt and pepper. Stir well and let simmer for about 15 minutes, until the flavors are well blended.
- While the sauce is simmering, cook the spaghetti according to the instructions on the package. Once cooked, drain well and add to the sauce.
- Toss the pasta and sauce until well combined. Divide into serving dishes, sprinkle with grated Parmesan cheese and garnish with fresh basil leaves. Serve immediately.
