Pasta Provençale

Ingredients:

  • 2 tbsp Olive oil
  • 3 pcs Garlic cloves
  • 1 pc Onion
  • 1 pc Red bell pepper
  • 1 can Diced tomatoes
  • 0.5 cup Black olives
  • 2 tbsp Capers
  • 0.5 tsp Dried oregano
  • to taste Salt
  • to taste Pepper
  • 400 grams Spaghetti pasta
  • as needed Grated Parmesan cheese
  • as garnish Fresh basil leaves

Instructions:

  1. Heat the olive oil in a large pan over medium heat. Add the garlic and onions and sauté until lightly golden.
  2. Add the red bell pepper to the pan and stir well. Cover and let cook for about 5 minutes, until softened.
  3. Add the diced tomatoes, black olives, capers, oregano, salt and pepper. Stir well and let simmer for about 15 minutes, until the flavors are well blended.
  4. While the sauce is simmering, cook the spaghetti according to the instructions on the package. Once cooked, drain well and add to the sauce.
  5. Toss the pasta and sauce until well combined. Divide into serving dishes, sprinkle with grated Parmesan cheese and garnish with fresh basil leaves. Serve immediately.
