New England Clam Chowder

Ingredients:

  • 2 tablespoon butter
  • 1 cup, chopped onions
  • 1.5 tablespoon all-purpose flour
  • 1 cup, chopped celery
  • 1 minced garlic clove
  • 2 cups, diced potatoes
  • 10 large, chopped clams
  • 8 ounce clam juice
  • 1 teaspoon thyme
  • 1 bay leaf
  • 1.5 cups heavy cream
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions:

  1. Melt the butter in a large pot over medium heat.
  2. Add the onions, celery and garlic to the pot and cook for about 5 minutes, until the veggies are tender.
  3. Stir in the flour until completely absorbed.
  4. Add the potatoes, clam juice, bay leaf and thyme to the pot. Bring the mixture to a simmer over medium heat and cook until the potatoes are tender, about 10-15 minutes.
  5. Add the clams, heavy cream, salt, and pepper. Cook for another 5 minutes, until the soup is heated through.
  6. Serve hot, garnished with additional thyme if desired.
