
New England Clam Chowder

Ingredients:
- 2 tablespoon butter
- 1 cup, chopped onions
- 1.5 tablespoon all-purpose flour
- 1 cup, chopped celery
- 1 minced garlic clove
- 2 cups, diced potatoes
- 10 large, chopped clams
- 8 ounce clam juice
- 1 teaspoon thyme
- 1 bay leaf
- 1.5 cups heavy cream
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions:
- Melt the butter in a large pot over medium heat.
- Add the onions, celery and garlic to the pot and cook for about 5 minutes, until the veggies are tender.
- Stir in the flour until completely absorbed.
- Add the potatoes, clam juice, bay leaf and thyme to the pot. Bring the mixture to a simmer over medium heat and cook until the potatoes are tender, about 10-15 minutes.
- Add the clams, heavy cream, salt, and pepper. Cook for another 5 minutes, until the soup is heated through.
- Serve hot, garnished with additional thyme if desired.
