Miso-Glazed Black Cod

Ingredients:

  • 4 piece Black Cod Fillets
  • 1 cup White Miso Paste
  • 1/2 cup Mirin
  • 1/4 cup Sake
  • 3 tablespoon Sugar
  • 2 stalks Green Onions

Instructions:

  1. In a small pot, add the mirin, sake, and sugar. Bring to a simmer over medium heat to dissolve the sugar.
  2. Add the miso paste to the pot and whisk until it is smooth.
  3. Let the miso glaze cool to room temperature.
  4. Place the black cod fillets in a large ziploc bag, and add half of the miso glaze. Seal the bag and massage the fish to evenly distribute the glaze. Refrigerate for at least 2 hours, or overnight for best results.
  5. Preheat your oven to 400 degrees F. Remove the black cod from the refrigerator and wipe off any excess marinade.
  6. Heat a cast-iron skillet over high heat. Once it is hot, add the fish skin-side down. Cook for 3 minutes, then flip and cook for another 2 minutes.
  7. Transfer the skillet to the preheated oven and roast for 10 minutes, or until the fish flakes easily with a fork.
  8. Garnish with sliced green onions and serve with the remaining miso glaze on the side.
