
Miso-Glazed Black Cod

Ingredients:
- 4 piece Black Cod Fillets
- 1 cup White Miso Paste
- 1/2 cup Mirin
- 1/4 cup Sake
- 3 tablespoon Sugar
- 2 stalks Green Onions
Instructions:
- In a small pot, add the mirin, sake, and sugar. Bring to a simmer over medium heat to dissolve the sugar.
- Add the miso paste to the pot and whisk until it is smooth.
- Let the miso glaze cool to room temperature.
- Place the black cod fillets in a large ziploc bag, and add half of the miso glaze. Seal the bag and massage the fish to evenly distribute the glaze. Refrigerate for at least 2 hours, or overnight for best results.
- Preheat your oven to 400 degrees F. Remove the black cod from the refrigerator and wipe off any excess marinade.
- Heat a cast-iron skillet over high heat. Once it is hot, add the fish skin-side down. Cook for 3 minutes, then flip and cook for another 2 minutes.
- Transfer the skillet to the preheated oven and roast for 10 minutes, or until the fish flakes easily with a fork.
- Garnish with sliced green onions and serve with the remaining miso glaze on the side.
