
Midnight Yakitori - Japanese Chicken Skewers

Ingredients:
- 4 pieces Skinless, boneless chicken thighs
- 2 tablespoons Japanese soy sauce
- 2 tablespoons Mirin
- 1 tablespoon Sugar
- 2 teaspoons Sake
- 1/2 teaspoon Freshly ground black pepper
- 8 pieces Bamboo skewers
- 2 stalks Spring onions
Instructions:
- Start by soaking the bamboo skewers in water, this prevents them from burning. Meanwhile, cut the chicken thighs into bite-sized pieces.
- In a bowl, mix together the soy sauce, mirin, sugar, sake, and ground black pepper. This will be the Yakitori sauce for the skewers.
- Take the soaked skewers and thread the chicken pieces onto them. Do this until all the chicken is used.
- Heat up a grill pan or outdoor grill on medium heat. Place the skewers on and cook each side for about 3-4 minutes.
- During the last minute of grilling, brush the skewers with the Yakitori sauce. Also, grill the spring onions and serve as a garnish.
