Midnight Yakitori - Japanese Chicken Skewers

Ingredients:

  • 4 pieces Skinless, boneless chicken thighs
  • 2 tablespoons Japanese soy sauce
  • 2 tablespoons Mirin
  • 1 tablespoon Sugar
  • 2 teaspoons Sake
  • 1/2 teaspoon Freshly ground black pepper
  • 8 pieces Bamboo skewers
  • 2 stalks Spring onions

Instructions:

  1. Start by soaking the bamboo skewers in water, this prevents them from burning. Meanwhile, cut the chicken thighs into bite-sized pieces.
  2. In a bowl, mix together the soy sauce, mirin, sugar, sake, and ground black pepper. This will be the Yakitori sauce for the skewers.
  3. Take the soaked skewers and thread the chicken pieces onto them. Do this until all the chicken is used.
  4. Heat up a grill pan or outdoor grill on medium heat. Place the skewers on and cook each side for about 3-4 minutes.
  5. During the last minute of grilling, brush the skewers with the Yakitori sauce. Also, grill the spring onions and serve as a garnish.
