
Midnight Yakitori Chicken

Ingredients:
- 1 pound Boneless chicken thighs
- 2 tablespoons Soy sauce
- 2 tablespoons Mirin
- 1 tablespoon Sugar
- 1 tablespoon Sake
- 4 pieces Skewers
Instructions:
- Soak the skewers in water for 30 minutes to prevent them from burning
- Cut the chicken into bite-sized pieces
- Skewer the chicken pieces, leaving small spaces between them for even cooking
- In a pan, combine soy sauce, mirin, sugar, and sake and heat over medium heat until sugar is dissolved
- Put the skewers on the grill, then baste the chicken with the sauce while turning the skewers occasionally
- Grill the chicken until it's cooked through and has a nice char, about 10-12 minutes
- Serve the Yakitori Chicken with rice for a satisfying midnight comfort meal
