Midnight Yakitori

Ingredients:

  • 2 pieces Chicken thighs, boneless and skinless
  • 1/4 cup Soy sauce
  • 1/4 cup Mirin
  • 1 tablespoon Sugar
  • 1 tablespoon Ginger, grated
  • 1 tablespoon Garlic, minced
  • 4 pieces Bamboo skewers
  • 2 pieces Scallions

Instructions:

  1. Cut the chicken thighs into 1 inch pieces.
  2. In a bowl, combine soy sauce, mirin, sugar, grated ginger and minced garlic. Mix well until sugar is fully dissolved.
  3. Add the chicken pieces to the bowl and let it marinate for at least 10 minutes.
  4. Preheat a grill pan over medium heat.
  5. Thread the chicken pieces onto the bamboo skewers, interspersing with pieces of scallion.
  6. Cook the skewers on the grill pan, basting with leftover marinade, for 5-7 minutes on each side or until fully cooked.
  7. Serve your Midnight Yakitori hot, enjoy your delicious late-night snack!
