
Midnight Yakitori

Ingredients:
- 2 pieces Chicken thighs, boneless and skinless
- 1/4 cup Soy sauce
- 1/4 cup Mirin
- 1 tablespoon Sugar
- 1 tablespoon Ginger, grated
- 1 tablespoon Garlic, minced
- 4 pieces Bamboo skewers
- 2 pieces Scallions
Instructions:
- Cut the chicken thighs into 1 inch pieces.
- In a bowl, combine soy sauce, mirin, sugar, grated ginger and minced garlic. Mix well until sugar is fully dissolved.
- Add the chicken pieces to the bowl and let it marinate for at least 10 minutes.
- Preheat a grill pan over medium heat.
- Thread the chicken pieces onto the bamboo skewers, interspersing with pieces of scallion.
- Cook the skewers on the grill pan, basting with leftover marinade, for 5-7 minutes on each side or until fully cooked.
- Serve your Midnight Yakitori hot, enjoy your delicious late-night snack!
