
Midnight Yaki Udon

Ingredients:
- 200 grams Udon noodles
- 2 tablespoons Soy sauce
- 1 tablespoon Mirin
- 1 teaspoon Sugar
- 1 medium Carrot
- 100 grams Shiitake mushrooms
- 2 stalks Green onion
- 2 teaspoons Sesame oil
- to taste Salt and pepper
Instructions:
- Cook the udon noodles according to the package instructions, then drain and set aside.
- In a small bowl, combine the soy sauce, mirin, and sugar and stir until the sugar is dissolved.
- Thinly slice the carrot and shiitake mushrooms, and chop the green onion.
- Heat the sesame oil in a pan and add the carrot and mushrooms. Cook over medium heat for 5 minutes.
- Add the cooked udon noodles to the pan along with the soy sauce mixture and toss to combine.
- Cook for another 5-10 minutes, until the noodles are heated through.
- Season with salt and pepper to taste, sprinkle with the chopped green onion, and serve.
