Midnight Yaki Udon

Ingredients:

  • 200 grams Udon noodles
  • 2 tablespoons Soy sauce
  • 1 tablespoon Mirin
  • 1 teaspoon Sugar
  • 1 medium Carrot
  • 100 grams Shiitake mushrooms
  • 2 stalks Green onion
  • 2 teaspoons Sesame oil
  • to taste Salt and pepper

Instructions:

  1. Cook the udon noodles according to the package instructions, then drain and set aside.
  2. In a small bowl, combine the soy sauce, mirin, and sugar and stir until the sugar is dissolved.
  3. Thinly slice the carrot and shiitake mushrooms, and chop the green onion.
  4. Heat the sesame oil in a pan and add the carrot and mushrooms. Cook over medium heat for 5 minutes.
  5. Add the cooked udon noodles to the pan along with the soy sauce mixture and toss to combine.
  6. Cook for another 5-10 minutes, until the noodles are heated through.
  7. Season with salt and pepper to taste, sprinkle with the chopped green onion, and serve.
