Midnight Veggie Stir-fry

Ingredients:

  • 4 cups Assorted vegetables such as bell peppers, broccoli, carrots, bok choy
  • 3 cloves Garlic
  • 1 inch Ginger
  • 2 tablespoons Low-sodium soy sauce
  • 1 tablespoon Sesame oil
  • 2 tablespoons Olive oil
  • 1 tablespoon Sesame seeds

Instructions:

  1. Slice the vegetables into uniform sizes.
  2. Mince the garlic and ginger.
  3. Heat oil in a skillet or wok over medium heat.
  4. Add the garlic and ginger and sauté until aromatic.
  5. Add the vegetables and stir-fry for about 5 minutes or until they are tender-crisp.
  6. Add the soy sauce and sesame oil, mixing well to evenly coat the vegetables.
  7. Cook for another 2-3 minutes.
  8. Serve the stir-fry hot, garnished with sesame seeds.
