
Midnight Veggie Stir-fry

Ingredients:
- 4 cups Assorted vegetables such as bell peppers, broccoli, carrots, bok choy
- 3 cloves Garlic
- 1 inch Ginger
- 2 tablespoons Low-sodium soy sauce
- 1 tablespoon Sesame oil
- 2 tablespoons Olive oil
- 1 tablespoon Sesame seeds
Instructions:
- Slice the vegetables into uniform sizes.
- Mince the garlic and ginger.
- Heat oil in a skillet or wok over medium heat.
- Add the garlic and ginger and sauté until aromatic.
- Add the vegetables and stir-fry for about 5 minutes or until they are tender-crisp.
- Add the soy sauce and sesame oil, mixing well to evenly coat the vegetables.
- Cook for another 2-3 minutes.
- Serve the stir-fry hot, garnished with sesame seeds.
