Midnight Veggie Quesadillas

Ingredients:

  • 1 tablespoon Olive oil
  • 2 cups Mixed Vegetables (Bell peppers, Zucchini, Onion)
  • 1 Garlic clove
  • 4 Flour tortillas
  • 1.5 cups Cheese, grated
  • 0.5 cup Black beans, canned, rinsed and drained
  • To taste Your favorite salsa

Instructions:

  1. 1. Heat a skillet over medium heat, add a tablespoon of olive oil.
  2. 2. Add the mixed vegetables and minced garlic to the skillet. Sauté until the vegetables are tender.
  3. 3. Layout your tortillas, evenly distribute the sautéd veggies, black beans, and cheese on half of each tortilla. Fold the tortillas in half over the filling.
  4. 4. Clean out the skillet and return to heat. Cook each quesadilla on both sides until golden brown and crispy and the cheesy filling has melted.
  5. 5. Cut each quesadilla into wedges. Serve warm with a side of your favorite salsa.
