
Midnight Veggie Quesadillas

Ingredients:
- 1 tablespoon Olive oil
- 2 cups Mixed Vegetables (Bell peppers, Zucchini, Onion)
- 1 Garlic clove
- 4 Flour tortillas
- 1.5 cups Cheese, grated
- 0.5 cup Black beans, canned, rinsed and drained
- To taste Your favorite salsa
Instructions:
- 1. Heat a skillet over medium heat, add a tablespoon of olive oil.
- 2. Add the mixed vegetables and minced garlic to the skillet. Sauté until the vegetables are tender.
- 3. Layout your tortillas, evenly distribute the sautéd veggies, black beans, and cheese on half of each tortilla. Fold the tortillas in half over the filling.
- 4. Clean out the skillet and return to heat. Cook each quesadilla on both sides until golden brown and crispy and the cheesy filling has melted.
- 5. Cut each quesadilla into wedges. Serve warm with a side of your favorite salsa.
