
Midnight Veggie Pesto Pasta

Ingredients:
- 4 oz spaghetti pasta
- 2 tbsp olive oil
- 1 medium red bell pepper
- 2 garlic clove
- 1/2 cup pesto sauce
- 1/3 cup grated Parmesan cheese
- to taste salt and pepper
- 1/2 cup cherry tomatoes
- a few leaves (for garnish) fresh basil
Instructions:
- Boil water for pasta and cook according to package instructions.
- While pasta is cooking, heat olive oil in a pan. Add diced bell pepper and garlic, cooking until softened.
- Drain pasta, reserving a bit of the pasta water.
- In the pan with the veggies, add the pesto sauce and cherry tomatoes, stir until nicely mixed.
- Add the cooked pasta to the pan, along with a little pasta water if needed to make the sauce creamy.
- Season with salt and pepper according to taste, and mix in the Parmesan cheese.
