Ingredients:
- 2 cups (like bell peppers, broccoli, caroots, baby corn, etc.) assorted vegetables
- 3 cloves garlic
- 2 stalks green onions
- 1 tablespoon vegetable oil
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon (optional) crushed red pepper
- 2 cups cooked white rice
Instructions:
- Prepare all your vegetables. Chop your bell peppers, broccoli, and baby corn into bite-sized pieces. Mince your garlic and slice your green onions, keeping the white and green parts separate.
- Heat the vegetable oil in a wok or large skillet over medium-high heat.
- Add your garlic and the white parts of your green onions to the pan. Cook for about 1 minute, or until fragrant.
- Add your assorted vegetables to the pan. Cook for about 5-7 minutes, or until the vegetables are cooked to your liking.
- Add your soy sauce, sesame oil, and crushed red pepper to the pan. Stir everything together to combine, cooking for about 1-2 more minutes.
- Serve over cooked white rice, topped with the green parts of your spring onions. Enjoy your midnight vegetable stir fry!
