
Midnight Vegetable Ratatouille

Ingredients:
- 2 tablespoons Olive Oil
- 2 cloves Garlic
- 1 medium Onion
- 1 medium Red Bell Pepper
- 1 medium Zucchini
- 1 medium Eggplant
- 3 medium Tomatoes
- 1 teaspoon Salt
- 0.5 teaspoon Ground Black Pepper
- 1 bunch Fresh Basil
- 1 teaspoon Thyme
- 1 loaf Baguette
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the sliced onion, bell pepper, and minced garlic to the pot and sauté until softened.
- Add the diced eggplant, zucchini, and tomatoes to the pot. Stir in the salt, black pepper, thyme, and a handful of chopped basil leaves. Cover and simmer for 25-30 minutes, stirring occasionally.
- Check the vegetables are tender and adjust seasoning if needed. Remove from heat and set aside to slightly cool.
- Slice the baguette, toast it lightly, and serve it on the side of your Ratatouille. Sprinkle some fresh basil on top before serving.
