Midnight Vegetable Ratatouille

Ingredients:

  • 2 tablespoons Olive Oil
  • 2 cloves Garlic
  • 1 medium Onion
  • 1 medium Red Bell Pepper
  • 1 medium Zucchini
  • 1 medium Eggplant
  • 3 medium Tomatoes
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground Black Pepper
  • 1 bunch Fresh Basil
  • 1 teaspoon Thyme
  • 1 loaf Baguette

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the sliced onion, bell pepper, and minced garlic to the pot and sauté until softened.
  2. Add the diced eggplant, zucchini, and tomatoes to the pot. Stir in the salt, black pepper, thyme, and a handful of chopped basil leaves. Cover and simmer for 25-30 minutes, stirring occasionally.
  3. Check the vegetables are tender and adjust seasoning if needed. Remove from heat and set aside to slightly cool.
  4. Slice the baguette, toast it lightly, and serve it on the side of your Ratatouille. Sprinkle some fresh basil on top before serving.
