
Midnight Udon Carbonara

Ingredients:
- 2 packets Udon noodles
- 2 Egg yolks
- 1 tbsp Soy sauce
- 1 tbsp Mirin
- 100 grams Pancetta or Bacon
- 50 grams Shiitake mushrooms
- 2 cloves Garlic
- 1 tbsp Butter
- 50 grams Parmesan cheese
- 2 stalks Spring onions
- to taste Salt
- to taste Black pepper
Instructions:
- Boil the udon noodles according to packet instructions, drain and set aside.
- In a bowl, whisk together the egg yolks, soy sauce and mirin. Set aside.
- In a large pan, fry the pancetta or bacon until crispy. Remove from the pan and drain on paper towel.
- In the same pan, sauté the shiitake mushrooms and minced garlic in butter until golden brown.
- Reduce the heat and slowly add the egg yolk mixture to the pan, stirring quickly to ensure it doesn't scramble.
- Add the cooked udon noodles to the pan and toss to cover in the sauce. Add the pancetta or bacon back into the pan.
- Sprinkle over the grated parmesan cheese and stir until the cheese has melted and the noodles are well coated.
- Season with salt and pepper to taste. Garnish with chopped spring onions.
- Serve immediately for a hearty midnight comfort meal.
