Midnight Udon Carbonara

Ingredients:

  • 2 packets Udon noodles
  • 2 Egg yolks
  • 1 tbsp Soy sauce
  • 1 tbsp Mirin
  • 100 grams Pancetta or Bacon
  • 50 grams Shiitake mushrooms
  • 2 cloves Garlic
  • 1 tbsp Butter
  • 50 grams Parmesan cheese
  • 2 stalks Spring onions
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Boil the udon noodles according to packet instructions, drain and set aside.
  2. In a bowl, whisk together the egg yolks, soy sauce and mirin. Set aside.
  3. In a large pan, fry the pancetta or bacon until crispy. Remove from the pan and drain on paper towel.
  4. In the same pan, sauté the shiitake mushrooms and minced garlic in butter until golden brown.
  5. Reduce the heat and slowly add the egg yolk mixture to the pan, stirring quickly to ensure it doesn't scramble.
  6. Add the cooked udon noodles to the pan and toss to cover in the sauce. Add the pancetta or bacon back into the pan.
  7. Sprinkle over the grated parmesan cheese and stir until the cheese has melted and the noodles are well coated.
  8. Season with salt and pepper to taste. Garnish with chopped spring onions.
  9. Serve immediately for a hearty midnight comfort meal.
