
Midnight Thai Chicken Comfort Stir-Fry

Ingredients:
- 2 pieces Chicken breast
- 1 medium Red bell pepper
- 1 small Onion
- 2 pieces Garlic cloves
- 2 tablespoons Soy sauce
- 1 tablespoon Brown sugar
- 1/2 teaspoon Chili flakes
- 2 tablespoons Cooking oil
- handful Thai basil leaves
- 2 cups Jasmine rice
Instructions:
- Cook the jasmine rice according to the package instructions.
- Meanwhile, cut the chicken breast into thin slices.
- Chop the bell pepper and onion into bite-sized pieces, mince the garlic.
- Heat oil in a large frying pan over medium-high heat. Add the chicken and cook until it turns white.
- Add in the chopped bell pepper, onion, and minced garlic. Stir-fry until the vegetables are slightly softened.
- Mix in the soy sauce, brown sugar, and chili flakes. Continue to stir-fry for another 2-3 minutes, until the sauce has thickened slightly.
- Remove the pan from heat and mix in the Thai basil leaves.
- Serve the stir-fry over the cooked jasmine rice, enjoy your tasty Thai comfort food!
