Midnight Thai Chicken Comfort Stir-Fry

Ingredients:

  • 2 pieces Chicken breast
  • 1 medium Red bell pepper
  • 1 small Onion
  • 2 pieces Garlic cloves
  • 2 tablespoons Soy sauce
  • 1 tablespoon Brown sugar
  • 1/2 teaspoon Chili flakes
  • 2 tablespoons Cooking oil
  • handful Thai basil leaves
  • 2 cups Jasmine rice

Instructions:

  1. Cook the jasmine rice according to the package instructions.
  2. Meanwhile, cut the chicken breast into thin slices.
  3. Chop the bell pepper and onion into bite-sized pieces, mince the garlic.
  4. Heat oil in a large frying pan over medium-high heat. Add the chicken and cook until it turns white.
  5. Add in the chopped bell pepper, onion, and minced garlic. Stir-fry until the vegetables are slightly softened.
  6. Mix in the soy sauce, brown sugar, and chili flakes. Continue to stir-fry for another 2-3 minutes, until the sauce has thickened slightly.
  7. Remove the pan from heat and mix in the Thai basil leaves.
  8. Serve the stir-fry over the cooked jasmine rice, enjoy your tasty Thai comfort food!
